I think naturally there’s aversion to things that have a bad smell or appearance. And I think part of the world is made like that. For example, unripe fruits have a bland color. When they ripen, there’s a color that attracts us . Pleasant aromas also attract us.
Ummm...but we make wines from overly-ripened grapes that don't taste pleasant either..there are so many alcoholic beverages that taste horrible but we drink them.
Moreover, what we call good or bad is conditioning, isn't it?
Wine is attunement of our senses that develops. There is a redeeming quality that overrides our innate revulsion. If that would be with waste matter then maybe the same would happen
